Potatoes are a versatile food that doesn't spoil easily
Ok I have a thing for potatoes

I’m not sure why it didn’t occur to me before, but last week when we did our supply run I had potatoes on the list. They don’t have to be refrigerated and they can be put into a closed bin at night to keep any smells from attracting bears, so I decided it was time to take some with us. And I cooked them… a lot!
One night we had fried potatoes and bacon. I cooked this over a small fire in my dutch oven so we wouldn’t use too much propane. Frying potatoes can take a bit of time
Unfortunately this may not be a regular menu …

A long shot of our campsite
Last week’s camping trip found us at a little campground just north of Globe AZ. We went out as usual planning to find a forest road and drive down it till we found us a nice spot to set up camp for the week. It took us longer to get up into the area though because of construction, so by the time we were in the Tonto National Forest it was dead dark. The roads were steep in places, plus winding and twisty. So as soon as we saw the campground sign we pulled over to take stock. I had downloaded a list of primitive camping sites before leaving, so we brought that up and discovered Jones Water was one of them. It …

Ok I finally took a little time to grab these off the camera, so I’m getting them online. These aren’t the best quality pics since I took them in a hurry before we started packing up to leave our camping spot last week, but they show a decent view of how things are “in action” at the moment.

Our Camper Door Screen
This picture shows our little camper door screen. When we’re in camp we leave the back door wide open and the screen is really handy for keeping out flies and mosquitoes. Our “budget approach” for the moment is to hold the screen in place with magnetic rocks. It works pretty well but I always seem to make them fall on my head at least once per trip

The trailer conversion to a camper is actually starting to shape up kind of nicely. We now have a bed which can be folded up into a couch as desired, and we have plenty of storage space under the bed area. In a way it’s kind of like the little Teardrop campers but bigger and not quite as cute

The Camper Bed Platform
As you can see in this photo, our bed platform is simple plywood sitting on top of supports.
The support on one side is a seven foot pantry cabinet we had given to us by family. We just laid that on it’s side and it makes nice little storage cubbys to hold all our dishes, food, games, books and so on. The opposite side of the bed platform is supported …

TeePee picnic spot in Texas
I haven’t had a chance to post much since we got back from the trip to South Carolina, but hopefully I’ll start getting that fixed now

Coming back across country wasn’t done too leisurely because we ran into money problems and we decided just to get back and rest for a bit.
Right around where the I-20 and I-10 meet up in west Texas though, we came across this little picnic spot on the side of the road. I thought it was beautiful
