Ok I have a thing for potatoes :) I’m not sure why it didn’t occur to me before, but last week when we did our supply run I had potatoes on the list. They don’t have to be refrigerated and they can be put into a closed bin at night to keep any smells from attracting bears, so I decided it was time to take some with us. And I cooked them… a lot! :)

One night we had fried potatoes and bacon. I cooked this over a small fire in my dutch oven so we wouldn’t use too much propane. Frying potatoes can take a bit of time :) Unfortunately this may not be a regular menu item for us because the grease clean up sucks :(

Another night we had au gratin potatoes with beef jerky and this one is a definite keeper. We were pretty surprised at how good that turned out.

Another night was biscuits and bacon gravy. So overall, this last week was MUCH better eating compared to spaghettios and ravioli.

The real winner for me though, was plain ol’ hashbrowns :D

Many people think hash browns are hard to cook but I have to disagree. I suspect the key is a well buttered hot cast iron skillet though.

I put the skillet on our little propane stove, added a generous hunk of butter (real butter not margarine) and let that get hot while I got the potatoes ready. All I did was wash and shred them using an old fashioned metal box cheese grater/shredder.

I spread the shredded potatoes into patty like things that weren’t too thick, then left them to cook well before trying to flip them over. If you flip them too soon they’ll fall apart and make a mess.

They turned out wonderfully and I was in heaven :D
